Ancho Chile powder

For Glaze

Maple syrup

½ cup

Apple juice

¼ cup

Brown sugar

3 tablespoons

Apple cider vinegar

3 tablespoons

Dijon mustard

Directions

For preparing ribs

  1. Place the rib slabs over a clean cutting board.

  2. Remove the entire fatty membrane present underside.

  3. Trim excess meat and fat.

For preparing rub

  1. Mix all the ingredients well in a mixing bowl.

  2. Rub it over the beef ribs.

  3. Spread the rubbed ribs over a flat tray, cover with a foil and leave for 8 hours or overnight.

For glaze

  • Put all the ingredients for glaze in a sauce pan.

  • Bring it to simmer for about 8 minutes until the concentration becomes syrupy.

  • Use wooden spoon for stirring.

Method

  1. Heat the grill to 250 degree F.

  2. Take the refrigerated ribs, place it over the heated grill and make sure the meatier side faces the grill surface.

  3. Cook for 3 hours.

  4. Turn a side and again cook for about 45 minutes until they become tender and soft.

  5. Apply glaze with a brush and leave for 5 minutes more.

  6. Slice and serve.
